Cooking with Gossip Girl: Funfetti cake!

Gossip lovers, listen up: is there anything sweeter than gossip? No! But a fluffy cake, filled and covered with secrets—oops, I mean colorful sprinkles—might do the trick every now and then.

⚠️ Attention, little gossipers: before you start, call your family or a grown-up to help! Ovens and knives don’t mix with solo adventures. This cake is all about fun to make together—and good gossip is always shared.

Ingredients

Cake Batter

  • 250 g all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 150 g unsalted butter, very soft
  • 200 g sugar
  • 1 whole egg + 2 egg whites (from gossip-loving hens)
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 120 g sour cream (or plain whole yogurt)
  • 120 ml whole milk
  • 80 ml neutral vegetable oil (canola, sunflower, or corn)
  • ½ cup (80 g) sprinkles (or more, for extra gossip… I mean, color!)

Frosting

  • 300 g white chocolate
  • 300 ml heavy cream (min. 35% fat)
  • 1 tsp vanilla extract

Decoration

  • Lots of sprinkles (stars, pearls, confetti—go wild!)

Instructions

Cake

  1. Preheat oven to 350 °F (180 °C). Grease a 9-inch round pan and line the bottom with parchment paper.
  2. In a bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat butter and sugar until light and fluffy (2–3 min).
  4. Add the whole egg, then the whites one at a time, beating well.
  5. Mix in vanilla, almond extract, sour cream, and oil.
  6. Alternate adding dry mixture and milk: half of the flour, then milk, then the rest of the flour.
  7. Gently fold in sprinkles with a spatula (don’t overmix, or the colors will run).
  8. Pour batter into the pan and bake for 30–35 min, until lightly golden and a toothpick comes out clean.
  9. Let cool completely before frosting.

Frosting

  1. Melt white chocolate in the microwave (30-second bursts at low power) or over a bain-marie.
  2. Heat half the cream until almost boiling, then pour it over the melted chocolate. Stir until smooth.
  3. Add the remaining cold cream and vanilla.
  4. Chill in the fridge for 2 hours.
  5. Whip until fluffy and thick, like firm whipped cream.

Assembly

  1. Place cooled cake on a serving plate.
  2. Spread whipped ganache on top and sides, smoothing it out.
  3. Cover generously with sprinkles (as if you were spreading gossip everywhere).

Final Touch

Now tell me: what’s gossip without an ending? Just like what’s a cake without a candle on top? Well, I already have the perfect candle saved for this occasion… but about that, you’ll just have to wait and see.

Okay, okay…! I’ll show you how my cake is turning out. But only a spoiler!

Cooking is always tastier (and safer!) with family around. So use this cake as an excuse to gather everyone in the kitchen and turn gossip into group fun. And if you try my cake, don’t forget to post and tag it with #XDCake. I want to see the sugary gossip spread all over PK XD!
